Apple Pie with Cheese Crust

This recipe comes from the book “Recipe Book for Enjoying Canadian Apples” published by the Department of Agriculture in the 1950’s

Ingredients

  • 5 to 10 (depending on size) cooking apples. We recommened Northern Spy, Cortland or Empire.

  • 1/2 cup grated cheese

  • Butter

  • Sugar (2 tablespoons per apple)

  • Cinnamon or nutmeg

  • Pie shell pastry, either store bought or homemade.

Directions

  1. Line pie plate with pastry.

  2. Cover with layer of thinly sliced apples.

  3. Allowing 2 tablespoons of sugar to each apple, sprinkle sugar, mixed with a little cinnamon or nutmeg over layer of apples.

  4. Dot with butter.

  5. Repeat until pie plate is well filled.

  6. Roll 1/2 cup grated cheese into pastry for upper crust.

  7. Cover apples with the cheese crust.

  8. Bake in a hot oven (425 F.) for 15 minutes. Reduce heat to 350 F. and bake for 20 to 30 minutes longer, or until apples are tender.
